In some countries, shiitakes are put in the fridge

In some countries, shiitakes are put in the fridge, or even freezer, for a 'cold shock' to induce them to fruit. Here, on our estate in the wilderness of beautiful Scotland, we simply leave them outside by our river! These will fruit gorgeous mushrooms in the next few weeks. And, fun fact: we bash our shiitakes a little to simultate a branch falling from a tree, and make our mushrooms even more tasty.
