Beautiful and mysterious, enigmatic and alluring, a visual and tasty treat; our Lion's Mane mushrooms have an unforgettable shaggy icicle-like sculptural appearance and beautifully sweet and rich aroma. Cooked Lion's Mane mushrooms impart an exciting, magnificent flavour often likened to tender lobster and aubergine, and a texture similar to succulent, juicy crab. At Deer Manor, we are delighted to grow a number of varieties of Organic Lion's Mane including Lion's Pride, Lion's Beard, Mountain-Priest, Satyrs Beard and Bearded Hedgehog strains. As versatile as it is delicious; Lion's Mane is often used in the vegan and vegetarian communities as a seafood or pork substitute. Cooking is recommended before consumption and with our heirloom cookbook - Recipes to Celebrate Mushrooms boasting over 130 mushroom-based meals, you will never be short of inspiration.
True to our wilderness-farmed ethos and sustainable roots, our Lion's Mane mushrooms are grown with care in small batches on our estate-based farm in the wilds of South West Scotland. Our processes are all natural and we harvest when taste is optimum - just moments before delivery. The result? A rare treat of a mushroom grown for your dining pleasure!
Please be aware that our mushrooms are grown in small batches in the Scottish wilderness, without any fertilisers or pesticides. Due to their unique quality and high demand, we typically maintain a waiting list for all orders. When you place an order, it will be added to the queue, and as mushrooms mature, we harvest and dispatch daily. This process usually means dispatch within a few weeks.
We are not a mass-production farm, and each batch is crafted with care to ensure premium quality. Many customers appreciate the nature of our process, but if you require the mushrooms by a specific date, please contact us before placing your order.
For subscription orders, please note that while you will receive 12 deliveries per year, they may not arrive on the same date each month, as dispatch depends on when each batch is ready.
For those gifting our mushrooms, we offer complimentary gift certificates, which can be sent directly to the recipient at no cost, allowing them to anticipate their fresh mushrooms in the queue for dispatch upon maturity. Alternatively, our bespoke grow kits dispatch within days and make wonderful gifts.

We cultivate a variety of Lion’s Mane strains, including Monkey Head Mushroom, Satyr’s Beard, Bearded Hedgehog Mushroom, and Mountain-Priest Mushroom, Bearded Tooth Fungus. The diversity is vast. The colour spectrum is broad, ranging from yellow, white, beige, to pink and even brown, influenced by species, humidity, and season. The appearance can vary from a cauliflower-like structure to low icicle tendrils or even an almost spiky ‘fur’ texture – all within the realm of normal. Care:
Our mushrooms should be refrigerated and kept in their breathable paper bag, never plastic, to prevent sweating. Best enjoyed within 7 days, we recommend that mushrooms are always cooked before being eaten. For stocks or soups, you can freeze fresh mushrooms and use directly in cooking without thawing. Alternatively, for long-term preservation, our mushrooms can be dehydrated using a low oven, a purpose-built dehydrator, or the sun (if you’re lucky!). Our mushrooms are wilderness-farmed, wilderness-pure and deeply nourishing so ideal for use in tinctures. Simply steep your mushrooms in high-proof, neutral grain alcohol for 6-8 weeks and take a few drops per day.
