Gourmet Medley Inclusions
Our Gourmet Medley is a reflection of our unwavering commitment to wilderness-farmed, chemical-free cultivation, and waste reduction practices. We grow over 20 gourmet mushroom varieties on rotation throughout the year. It is not possible to specify or guarantee specific mushroom varieties in each Medley, nor can we guarantee the specific colour scheme or look of each Medley. We grow in small, careful batches, and so Medleys harvested on the same day may contain different mushrooms. What’s more, given that we grow wilderness-farmedally and according to a zero waste and sustainable ethos, there is always a chance that some mushrooms may look ‘wonky’ (as nature intended). We do not throw out or waste delicious, nutrient-dense mushrooms because of their appearance.
Gourmet Medley Assortment
The composition of your mushroom medley is determined by its total weight. Smaller medleys (e.g., 300g) may feature fewer varieties than larger ones (e.g., 2.5kg).
Our harvesters prioritise fulfilling the paid-for weight while preserving the natural integrity of mushroom bouquets. For instance, if three whole bouquets meet the required weight, these will take precedence over a mixed selection that requires splitting them.
Additionally, our medleys are curated based on availability. If a single variety meets the ordered weight, it may be provided as part of the Medley, which represents a selection of the freshest mushrooms available at the time of packing.
Lion’s Mane: Range of Normal
We cultivate a variety of Lion’s Mane strains, including Monkey Head Mushroom, Satyr’s Beard, Bearded Hedgehog Mushroom, and Mountain-Priest Mushroom, Bearded Tooth Fungus. The diversity is vast. The colour spectrum is broad, ranging from yellow, white, beige, to pink and even brown, influenced by species, humidity, and season. The appearance can vary from a cauliflower-like structure to low icicle tendrils or even an almost spiky ‘fur’ texture – all within the realm of normal. Taste also spans a spectrum from sweet to savoury. We believe this diversity enhances the culinary experience.
