As we prioritise natural growth and refrain from using chemicals, the specific varieties you receive may vary with each order, adding an element of surprise to your culinary adventures. However, rest assured that our small, carefully curated batches are hand-harvested at peak maturity, ensuring the Michelin-star quality that we are renowned for. A Note About Dispatch Times:
Please be aware that our mushrooms are grown in small batches in the Scottish wilderness, without any fertilisers or pesticides. Due to their unique quality and high demand, we typically maintain a waiting list for all orders. When you place an order, it will be added to the queue, and as mushrooms mature, we harvest and dispatch daily. This process usually means dispatch within a few weeks.
We are not a mass-production farm, and each batch is crafted with care to ensure premium quality. Many customers appreciate the nature of our process, but if you require the mushrooms by a specific date, please contact us before placing your order.
For subscription orders, please note that while you will receive 12 deliveries per year, they may not arrive on the same date each month, as dispatch depends on when each batch is ready.
For those gifting our mushrooms, we offer complimentary gift certificates, which can be sent directly to the recipient at no cost, allowing them to anticipate their fresh mushrooms in the queue for dispatch upon maturity. Alternatively, our bespoke grow kits dispatch within days and make wonderful gifts.

Our Gourmet Medley is a reflection of our unwavering commitment to wilderness-farmed, chemical-free cultivation, and waste reduction practices. We grow over 20 gourmet mushroom varieties on rotation throughout the year. It is not possible to specify or guarantee specific mushroom varieties in each Medley, nor can we guarantee the specific colour scheme or look of each Medley. We grow in small, careful batches, and so Medleys harvested on the same day may contain different mushrooms. What’s more, given that we grow wilderness-farmedally and according to a zero waste and sustainable ethos, there is always a chance that some mushrooms may look ‘wonky’ (as nature intended). We do not throw out or waste delicious, nutrient-dense mushrooms because of their appearance. To learn more, about taste, composition, texture and appearance, please visit here.
Care:
Our mushrooms should be refrigerated and kept in their breathable paper bag, never plastic, to prevent sweating. Best enjoyed within 7 days, we recommend that mushrooms are always cooked before being eaten. For stocks or soups, you can freeze fresh mushrooms and use directly in cooking without thawing. Alternatively, for long-term preservation, our mushrooms can be dehydrated using a low oven, a purpose-built dehydrator, or the sun (if you’re lucky!). Our mushrooms are wilderness-farmed, wilderness-pure and deeply nourishing so ideal for use in tinctures. Simply steep your mushrooms in high-proof, neutral grain alcohol for 6-8 weeks and take a few drops per day.
